APPLE CRUMBLE CHEESECAKE RECIPE
Happy Thanksgiving, lovelies! This year I am spending it with my husband’s family as we celebrate our first Thanksgiving as newlyweds. My husband’s favorite dessert is apple pie and mine is cheesecake, so this year I found something to satisfy both our cravings! This cheesecake is super easy to make, but it looks and tastes like something straight out of a Food Network Star’s personal recipe stash. (Do they use recipes…?) Well, who cares? It’s delicious!

INGREDIENTS
CRUST:
2 cups gluten-free old-fashioned oats
1 cup gluten-free flour
1/3 cup brown sugar, packed
3/4 cup butter, melted
1/4 tsp salt
CHEESECAKE FILLING:
3 (8oz.) packages of cream cheese, room temp
1/2 tsp vanilla
2/3 cup sugar
3 eggs, room temp
APPLE LAYER:
3 apples, peeled, cored and sliced about 1/4” thick
1 tsp cinnamon
1/2 tsp salt
2 Tbsp sugar
dash nutmeg
TOPPING:
1 cup brown sugar, packed
1 cup gluten-free flour
1 cup gluten-free old-fashioned oats
1/2 tsp salt
1/2 tsp cinnamon
3/4 unsalted butter, softened
DIRECTIONS
- Preheat your oven to 350.
- Prepare CRUST in a MEDIUM bowl: combine oats, flour, and brown sugar. Stir in butter and salt. Press onto the bottom of a 10-inch springform pan coated with cooking spray and set aside. (Hint: I like to press a piece of parchment paper to the bottom for easier removal).
- Prepare FILLING in a MIXING bowl: beat cream cheese, vanilla, and sugar until smooth. Add eggs; beat on low speed just until combined. Pour over crust.
- Mix the apple slices with the cinnamon, salt, sugar, and nutmeg.
- Arrange apple slices over cheesecake filling.
- Prepare TOPPING in a MEDIUM bowl: combine brown sugar, flour, oats, and cinnamon in bowl. Cut in butter until crumbly. Sprinkle over apple slices.
- Bake for 30-45 minutes (depending on the size of your pan) or until the edges are set and the center is almost set.
- Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer.
- Refrigerate overnight. Just before serving, removes sides of the pan.
- If using caramel sauce, drizzle over cheesecake just before serving.
